Edible Moss

A spongy microwave cake used as decoration - an imitation of edible moss or coral.

Ingredients

1egg
12 гsugar
30 гmaple syrup
food coloring
25 гflour
5 гbaking powder

Instructions

  1. Beat 1 egg at very high speed with 12 g sugar and 30 g maple syrup.
  2. Add coloring as desired.
  3. Add 25 g flour sifted with 5 g baking powder and mix well.
  4. Pour the mixture into plastic cups up to half their height and "bake" in the microwave at 800°C (W) for 2 minutes. Depending on the power of your microwave, you may need to bake longer, but no more than 3 minutes.
  5. Remove the cups and turn them upside down so the mixture keeps its porous structure; leave to cool completely. Tear off pieces and use for decoration as desired. Can be used as an imitation of edible moss or coral.

Notes: In my own test I found I can increase the baking powder a little, for larger holes, and that the minutes must be observed exactly, because even a slight increase overbakes it and it becomes hard. The maple syrup can be replaced with honey.
