
Einkorn Bread
Three suggestions for baking einkorn (limec) bread in the oven, ranging from a baking soda and apple cider vinegar dough to a yeasted loaf and an egg-and-yogurt version.

Recipe for einkorn bread (suggestion 1) Ingredients: To make this bread you will need: freshly ground Bulgarian einkorn flour; water; baking soda; natural apple cider vinegar (fat-free). Method: To begin – grind einkorn on a stone mill. This way we ourselves obtain freshly ground flour, right before our eyes. For one loaf we will need about 500 grams of flour. As the next step we prepare the soda and the vinegar. It is recommended that the vinegar be really apple cider vinegar. And so, into about 400 ml water add half a tablespoon of baking soda. Stir well until the soda dissolves in the water. Add 1-2 tablespoons apple cider vinegar. Stir quickly and pour the foaming mixture into the bowl with the flour. Then stir very well, until a semi-liquid dough is obtained. At the end – pour the dough into the baking tin, on which we should have placed baking paper beforehand. Level it, and we are ready to put the bread in the oven. Bake at 170 degrees for about [0] minutes. Before taking the bread out it is good to check with a toothpick whether it is well baked. When we take the bread out, we brush it with water and wrap it in a cloth. Once it cools it is ready to be enjoyed and to receive the magical powers of the wheat.
Recipe for einkorn bread (suggestion 2) Leavened einkorn bread Ingredients: 3 cups whole grain einkorn flour (about 500 g); 1 and a half cups water (375 ml); 1 coffee spoon dry yeast (or 1/8 fresh yeast cube); 1 teaspoon sugar (3 g); 1/2 teaspoon salt (1.5–2 g); sesame (for sprinkling). Method: All ingredients, except the sesame, are placed in a bowl and mixed with a mixer, until a very thick dough is obtained. The resulting dough rests for 1 hour, after which it is mixed again. It is placed in a rectangular loaf tin, greased beforehand with unrefined butter. Sprinkle with the sesame. Let it rise in a warm place (25-30 degrees) for about 4[+] hours. Bake in an oven preheated to 220 degrees for about 35-45 minutes. After removing, cover the tray with a cloth until it cools.
Recipe for einkorn bread (suggestion 3) Ingredients: 500 g einkorn flour; 1 tsp salt; 1 tbsp olive oil; 1 tbsp vinegar (balsamic or plain); 2 eggs (may be omitted); 1 tub yogurt, preferably homemade; 1 tsp baking soda. Optionally you may add: 1-2 tablespoons pumpkin seeds, flax seeds, white sesame, millet and other favorite seeds. Method: The flour, salt, olive oil, vinegar and the two eggs are poured into a large tray. Into the tub of yogurt add a small spoon of soda and stir well, then add the yogurt to the tray. All ingredients are mixed with a spoon until a dough forms. Since it is stickier, in order to shape it appropriately for a baking tin (or whatever clay vessel you have), it is necessary to lightly dust it with flour on top. This way a light film will form, which will allow shaping by hand without getting completely covered in dough. The shaped dough is transferred to a greased tray. Bake without letting it rise, in an oven preheated to 180 degrees, for about 45 minutes. To check whether the bread is ready, you can use the old toothpick method.
