
Fitness - Healthy Waffles
Wholesome vegetarian, soy-free waffles made with quinoa, rice and whole wheat flour, banana and applesauce. (This page cluster also includes three more waffle recipes — Almond Waffles, Paleo Apple & Cinnamon Waffles and Kiwi Waffles — preserved in full below.)
Ingredients

| ½ cup | 120 ml | rice flour |
| 1 cup | 240 ml | whole wheat flour |
| 1 tbsp | 15 ml | baking powder |
| ½ tsp | 2.5 ml | cinnamon |
| ¼ tsp | 1.3 ml | nutmeg |
| 1 | banana, mashed | |
| ½ cup | 120 ml | unsweetened applesauce |
| 2 | eggs | |
| 1½ cup | 360 ml | almond milk |
| 1 tsp | 5 ml | vanilla extract |
| handful | blueberries, to garnish | |
| to garnish | sliced apples, to garnish |
Instructions
Prep time: 20 mins | Cook time: 15 mins | Total time: 35 mins | Serves: 6 Dietary preferences: Vegetarian, Soy-free
- Preheat the waffle iron on medium heat.
- In a large mixing bowl combine the flours, baking powder, cinnamon and nutmeg and set aside.
- In a separate large bowl, whisk the eggs until fluffy and there are bubbles starting to form. Add the milk, applesauce and vanilla. Whisk well to combine.
- Stir through the mashed banana and beat until smooth.
- Add the wet ingredients to the dry ingredients and gently stir with a wooden spoon. Try not to over mix.
- Coat the waffle iron with cooking spray.
- Carefully spoon your batter onto the pre-heated waffle iron and cook until golden brown.
- Repeat until all the batter is finished.
- Top with blueberries and sliced apple.
A dollop of natural yoghurt and some organic pure maple syrup works well too!
Almond Waffles (Бадемови гофрети)
Ingredients:
- 200 g butter
- 50 g sugar
- 200 g flour
- 1 tsp baking powder
- 2 tsp vanilla sugar
- 100 g ground almonds (walnuts or hazelnuts also work)
- 4 eggs
- 3 tbsp cherry liqueur (rum)
- butter for greasing the appliance
Method:
- With a mixer, beat the butter with the sugar.
- Sift the flour with the baking powder, add the vanilla and the nuts.
- Add this mixture to the beaten butter, alternating it with the beaten eggs.
- Flavor with the cherry liqueur.
- The batter should be a liquid, smooth mixture.
- Pour it into the already heated waffle iron and smooth the top.
- Bake for 3 minutes until golden-brown.
- Cool the ready waffles on a kitchen rack.
- You can serve them right away, dusted with powdered sugar and cinnamon.
- They go well with fresh or canned fruit, finely chopped.
- They can also be served with scoops of ice cream.

Paleo Apple & Cinnamon Waffles (Палео гофрети с ябълка и канела)

The batter in these Paleo apple & cinnamon waffles is low in sugar, but nevertheless very tasty thanks to the apple. You can prepare the batter and leave it in the fridge overnight, so you can quickly make breakfast during a busy week. Ingredients:
- 1 ½ cups almond flour
- ¼ cup tapioca
- 1 tbsp shredded coconut
- 2 eggs, yolks and whites separated
- 1 ½ tsp vanilla
- ¾ tsp cinnamon
- 1 apple, peeled and grated
- 1 tbsp baking powder
- ½ cup milk
- 2 tbsp butter, melted
- Pinch of sea salt
- Fresh fruit (optional)
Instructions:
- Heat the waffle appliance.
- Mix the almond flour, tapioca starch, shredded coconut, cinnamon, salt and baking powder.
- In another bowl mix the yolks, vanilla, milk, apple and melted butter. Add them to the dry ingredients to form a batter.
- Beat the egg whites to stiff peaks and add them to the batter.
- Lightly grease the waffle plates with butter and pour enough batter to cover the plates.
- Cook about 2 to 3 minutes, until golden and you can easily remove the waffles from the plate.
- Repeat with the remaining batter.
- Serve warm with fresh fruit or honey.

Kiwi Waffles (Гофрети с киви)
Ingredients:
- 2/3 cup flour
- 2 eggs (I needed 2 to make sure the waffle stuck together)
- 1 tablespoon baking powder
- Sweetener to choice (I added about ½ cup stevia)
- 3 pureed kiwis (as stuck into my magic bullet)
- ½-1 cup water. I used about ¾ cup water and ¾ of the kiwi mixture.
Add the dry ingredients to the wet and put into said waffle maker.
