Frittelle (Italian Carnival Fritters)

Classic Italian Carnival frittelle — light, yeast-risen fried dough balls with raisins, fried golden and rolled in sugar.

Ingredients

300 gplain flour
50 gsugar
7 ginstant dry yeast
2eggs
200 mlwarm milk
50 graisins, soaked
1lemon zest
a pinchsalt
oil, for deep-frying
sugar, for rolling

Instructions

  1. In a large bowl whisk together the flour, sugar, yeast, lemon zest and salt.
  2. Beat in the eggs and the warm milk, mixing to a smooth, thick batter. Drain the raisins and fold them through.
  3. Cover with a tea towel and leave to rise in a warm place for about 1 hour, until doubled and bubbly.
  4. Heat plenty of oil in a deep pan to 170–180°C (340–356°F).
  5. Using two teaspoons, drop small balls of batter into the hot oil and fry a few at a time, turning them with a slotted spoon until puffed and golden all over.
  6. Drain on paper towels, then roll the warm frittelle in sugar. Serve warm.
