BackGarlic-Tamarind Pork Loin

Garlic-Tamarind Pork Loin

A grilled pork loin with a Southeast Asian-style marinade of lime, soy, garlic, tamarind and sambal oelek. Original recipe yields 2 servings.

Ingredients

1/8 cup30 mllime juice
1/8 cup30 mlsoy sauce
3 clovesgarlic, minced
1 1/2 tablespoons23 mltamarind paste
1 tablespoon15 mlsugar
1 tablespoon15 mlsambal oelek
1 pound455 gpork loin

Instructions

  1. Mix lime juice, soy sauce, garlic, tamarind paste, sugar and sambal oelek together in a bowl. Whisk for 1 minute.
  2. Poke the pork tenderloin with a fork or knife and place in a large resealable plastic bag. Pour the marinade into the bag and seal while pressing out the air. Marinate in the refrigerator 8 hours to overnight for best results.
  3. Preheat an outdoor grill for high heat and lightly oil the grate.
  4. Remove the pork loin from the bag and sear on the preheated grill, 1 to 3 minutes per side. Move to indirect heat until cooked through, 20 to 30 minutes more, depending on thickness.
