Ginger Cookies
Honey-and-spice cut-out cookies fragrant with ginger, cinnamon and citrus zest that taste even better with age.

Ingredients
| 85 g | butter | |
| 3 tbsp | 45 ml | sugar |
| 100 g | honey | |
| 1 | egg | |
| 350 g | flour | |
| 1/4 tsp | 1.3 ml | baking soda |
| 1 tbsp | 15 ml | ground ginger |
| 1 tsp | 5 ml | cinnamon |
| 2 tbsp | 30 ml | grated lemon and orange zest |
Instructions
In a deep pot, melt the butter with the sugar and honey. Once it has cooled, add the egg to the mixture. Separately mix the flour with the baking soda and the spices, then add it to the butter mixture. Add the citrus zests as well and knead the dough by hand. Leave it in a cool place for about an hour, then roll it out and cut out shapes as desired. Arrange them on baking paper and bake for 6-8 minutes in an oven preheated to 200°C. They can be eaten right away, and also the longer they stand, the more pronounced the flavour of the spices becomes. This batch makes approximately 50 pieces.
