
Ginger Tilapia
While Tilapia are already fantastic on their own, adding some ginger alongside fresh herbs just further helps to amplify its lush flavors!

Ingredients
| 1 pound | 455 g | Tilapia fish fillets |
| 3 tablespoons | 45 ml | low sodium coconut aminos |
| 2 tablespoons | 30 ml | white vinegar |
| 2 | fresh garlic cloves, minced | |
| 1 pinch | salt and pepper | |
| 1 tablespoon | 15 ml | olive oil |
| 2 tablespoons | 30 ml | fresh ginger, julienned |
| 1/4 cup | 60 ml | fresh scallions, julienned |
| 1/4 cup | 60 ml | fresh cilantro, chopped |
Instructions
Take a bowl and add coconut aminos, white vinegar, minced garlic, salt, white pepper and mix well. Add tilapia fish and carefully spoon the sauce over and coat it. Marinate for 2 hours. Add 2 cups of water to the Pot. Add steamer rack to the Instant Pot and remove fillets from marinade, transfer them to Steamer Rack. Lock lid and cook on LOW pressure for 2 minutes. Quick-release pressure. Transfer fillets to serving the dish and discard water. Set your Instant Pot to Sauté mode and add olive oil, let it heat up. Add julienned ginger and sauté for a few seconds. Add scallions, cilantro and sauté for 2 minutes. Stir in remaining marinade and let it heat up. Spoon the sauce over fish. Enjoy!
