Gingerbread Pizzelle
Warmly spiced gingerbread pizzelles made with molasses, olive oil, and holiday spices.

Ingredients
| 1¾ cup | 420 ml | all-purpose flour |
| ½ tsp | 2.5 ml | allspice |
| 3 | large eggs | |
| for dusting | powdered sugar for dusting | |
| ¼ tsp | 1.3 ml | fine salt |
| 1 tsp | 5 ml | vanilla extract |
| ½ cup | 120 ml | light olive oil |
| 2 tsp | 10 ml | ground cinnamon |
| ¼ tsp | 1.3 ml | cloves |
| ¼ tsp | 1.3 ml | ground nutmeg |
| 2 tsp | 10 ml | ground ginger |
| 3 tbsp | 45 ml | molasses |
| ā cup | 160 ml | white sugar |
Instructions
- With a whisk, add the oil and molasses.
- Put the flour, salt, vanilla, and spices in the bowl.
- If you have an electric pizzelle maker, you can plug it in and heat it on the stove.
- Put a tbsp of batter on the iron and bake until it turns a golden light brown color.
- Take off and let cool on a wire rack.
- Sprinkle with icing sugar powder.
- Store cookies that have cooled in containers with lids.
