
Grandma's Honey Cookies (Medenki)
A handwritten family recipe for medenki (soft honey cookies), transcribed from grandma's notebook.
Ingredients
| 2 tbsp | 30 ml | honey |
| 1 cup | 240 ml | sugar |
| 3/4 cup | 180 ml | oil |
| 2 | eggs | |
| 1 tsp | 5 ml | baking soda, slaked in bread/dough |
| 1 tsp | 5 ml | cinnamon |
| — | flour, as needed for a soft dough | |
| — | jam, for sticking together |
Instructions
- Combine all the listed products with flour until a soft dough forms.
- With fingers and hands greased with oil (since the dough sticks to the hands), shape small balls the size of a walnut. Arrange them on a greased tray, spaced apart.
- Bake until lightly browned (about 10-15 minutes).
- Stick them together two by two with jam (you can also leave them unstuck).
- They are good once they have rested for 2-3 days.
