
Grandma's Milinki (Bulgarian Cheese Buns)
Grandma's milinki — soft yeast-dough balls dipped in lard, filled with cheese, arranged in a pan and baked under a butter-and-flour topping.
Ingredients
| 1 1/2 ч.ч. | warm water |
| 40 г | fresh yeast |
| 1 ч.л. | salt |
| — | flour, for a soft dough |
| 3 с.л. | pork lard (for the filling) |
| 2 броя | eggs (for the filling) |
| 300 г | cheese (for the filling) |
| 1/2 пакетче | cow's butter (for the topping) |
| 1 ч.л. | salt (for the topping) |
| — | flour, for a thick boza consistency (for the topping) |
Instructions

Dissolve the yeast in the warm water with a pinch of sugar. Add the mixture to the sifted flour together with the salt. Adding flour gradually, knead a soft, smooth dough and leave it to rise for 1 hour in a warm place.

For the filling, mix the crumbled cheese with the eggs. From the risen dough tear off equal balls, dip them in lard, stretch them out with your hands and put a little filling in the middle. Carefully roll them back into balls. Dip them again in melted lard and arrange them in a pan next to one another, with the fold facing down. Leave them to rise again for a while.

For the topping, melt the butter with the salt and thicken the mixture with a little flour so you get a mixture with the consistency of thick boza. Pour it over the milinki and put them to bake in a preheated oven, first from below.

As soon as they rise and the fat starts to sizzle, turn the oven to 220 degrees top and bottom and finish baking the milinki.
Prep 25 min, cook 25 min, total 50 min. Serves 8-10 pieces.
