
Grilled Citrus Salmon with Pineapple Salsa
Salmon grilled in a foil packet under a sweet-tangy citrus and soy glaze, served with a fresh pineapple salsa.

Ingredients
| 1/4 cup | 60 ml | orange juice |
| 1/4 cup | 60 ml | lemon juice |
| 1/4 cup | 60 ml | lime juice |
| 1/4 cup | 60 ml | orange marmalade |
| 2 | garlic cloves, minced | |
| 3 Tablespoons | 45 ml | soy sauce |
| 1/4 cup | 60 ml | brown sugar |
| 1 Tablespoon | 15 ml | cornstarch |
| 1 Tablespoon | 15 ml | water |

| 2 pounds | 905 g | salmon filet |
| 1 recipe | pineapple salsa | |
| — | sliced orange, lemon and lime (optional garnish) |
Instructions
- In a medium saucepan whisk together the orange juice, lemon juice, lime juice, orange marmalade, garlic, soy sauce and brown sugar. In a small bowl combine the cornstarch and water and whisk into the sauce. Heat to medium-high and let simmer until it starts to thicken. Remove from the heat.
- Heat the grill to medium-high heat. Place the salmon on a sheet of non-stick aluminum foil and fold up the edges. Spread on half of the marinade. Place the foil on the grill and let the salmon cook for 10-12 minutes, or until the salmon is opaque and cooked throughout. Spread the remaining marinade on top, garnish with sliced citrus if desired, and serve with the pineapple salsa.
