
Grilled Flank Steak with Garlic & Rosemary
Flank steak marinated in a fragrant garlic-rosemary olive oil, grilled hot and fast, then sliced thin against the grain.

Ingredients
| ½ cup | 120 ml | extra virgin olive oil |
| 2 Tbsp | 30 ml | fresh rosemary, chopped |
| 4 cloves | garlic | |
| 2 tsp | 10 ml | kosher salt |
| ¼ tsp | 1.3 ml | black pepper |
| 2 - 2½ lb | 905 g – 1.1 kg | flank steak |
Instructions
- Make the marinade by blending the olive oil, rosemary, garlic, salt and pepper for a few minutes, until the garlic and rosemary are pulverized.
- Place the flank steak in a baking dish. Poke the meat about 10 times per side with a fork, pour over the marinade and turn to coat. Cover and refrigerate at least 1 hour or overnight.
- Grease the grill with oil and preheat to high. Grill the steak covered about 5 minutes, then turn and cook covered 3-4 minutes more.
- Let the meat rest on a cutting board under foil about 15 minutes, then slice very thin against the grain.
