Grilled Salmon

Serves 4. The combination of citrus juice with garlic, onion, salmon and mustard gives the fish an incredible flavor, and the ginger enhances its aroma.

Ingredients

1/3 cup80 mlsoy sauce
1/4 cup60 mlfreshly squeezed orange juice
3 teaspoons15 mlolive oil
2 teaspoons10 mltomato sauce
1 teaspoon5 mllemon juice
1/2 teaspoon2.5 mlmustard
1 tablespoon15 mlfinely chopped onion
1large garlic clove, crushed
1/2 teaspoon2.5 mlcrushed fresh ginger root
4salmon fillets

Instructions

  1. In a deep bowl, mix the soy sauce, orange juice, 2 tablespoons olive oil, tomato sauce, lemon juice, mustard, onion, garlic and ginger. Stir well. Place the salmon fillets in the prepared marinade, cover the dish and refrigerate for about 1 hour.
  2. Prepare the barbecue. The temperature should be high before you start cooking the fish.
  3. Remove the fillets from the marinade. Pour the liquid into a pan and heat to a boil. Let it boil for about 1 minute.
  4. Brush the salmon fillets with olive oil and grill them on the barbecue for about 5-10 minutes on each side. When you turn the fillets to cook, brush them with the heated marinade. Serve with a garnish of your choice.
