Grilled Salmon
Serves 4. The combination of citrus juice with garlic, onion, salmon and mustard gives the fish an incredible flavor, and the ginger enhances its aroma.
Ingredients
| 1/3 cup | 80 ml | soy sauce |
| 1/4 cup | 60 ml | freshly squeezed orange juice |
| 3 teaspoons | 15 ml | olive oil |
| 2 teaspoons | 10 ml | tomato sauce |
| 1 teaspoon | 5 ml | lemon juice |
| 1/2 teaspoon | 2.5 ml | mustard |
| 1 tablespoon | 15 ml | finely chopped onion |
| 1 | large garlic clove, crushed | |
| 1/2 teaspoon | 2.5 ml | crushed fresh ginger root |
| 4 | salmon fillets |
Instructions
- In a deep bowl, mix the soy sauce, orange juice, 2 tablespoons olive oil, tomato sauce, lemon juice, mustard, onion, garlic and ginger. Stir well. Place the salmon fillets in the prepared marinade, cover the dish and refrigerate for about 1 hour.
- Prepare the barbecue. The temperature should be high before you start cooking the fish.
- Remove the fillets from the marinade. Pour the liquid into a pan and heat to a boil. Let it boil for about 1 minute.
- Brush the salmon fillets with olive oil and grill them on the barbecue for about 5-10 minutes on each side. When you turn the fillets to cook, brush them with the heated marinade. Serve with a garnish of your choice.
