
Sardines with Grilled Bread and Tomato
Charred whole sardines served over grilled sourdough with juicy heirloom tomato and torn basil.

Ingredients
| 2 tablespoons | 30 ml | olive oil, plus more |
| 4 slices | sourdough or country-style bread, ¾-inch-thick slices | |
| 12 | whole fresh sardines, scaled, gutted, large pin bones removed (1–1½ pounds total) | |
| — | kosher salt and freshly ground black pepper | |
| 1 | large tomato, preferably heirloom, sliced | |
| — | torn basil leaves, for serving |
Instructions
- Prepare grill for medium-high heat and oil the grate. Brush both sides of the bread with 2 Tbsp oil total and grill, turning occasionally, until toasted and lightly charred, about 4 minutes. Transfer to a plate.
- Season the sardines inside and out with salt and pepper (no need to oil them, as their skin is naturally rich). Grill, turning occasionally, until lightly charred and cooked through, 5–7 minutes.
- Serve the sardines with the tomato and grilled bread, drizzled with olive oil and topped with basil.
