
Grilled Tomatoes
Thick tomato slices grilled over high heat until smoky and charred, then finished with fresh toppings for an easy summer side.

Ingredients
| 3–4 | large firm tomatoes |
| — | salt and pepper |
| — | olive oil |
| — | freshly shredded parmesan (optional) |
| — | flaky sea salt (optional) |
| — | balsamic glaze (optional) |
| — | basil (optional) |
Instructions
- Preheat a grill to high heat. Slice the tomatoes into 1/2-inch slices (you can seed them, but it's optional). Drizzle with olive oil and season with salt and pepper.
- Add the sliced tomatoes to the grill and grill on each side for 2–3 minutes.
- Remove from the grill and serve with optional toppings if desired.
Tips: Grill on high heat for the best smoky char. Choose large, heavy, deep-red tomatoes bought no earlier than a day before grilling. Beyond basil, try rosemary, oregano, cilantro or dill; swap parmesan for feta for a Greek twist, or serve with fresh mozzarella for a Caprese style.
