
Grilled Tuscan Pork Skewers
Cubes of marinated pork tenderloin threaded with zucchini, squash, peppers and onion in a fragrant Tuscan herb blend.

Ingredients

| 2 | zucchini, sliced | |
| 2 | yellow squash, sliced | |
| 2 | red bell peppers, cut into chunks | |
| 1 | red onion, cut into chunks | |
| 2 tbsp | 30 ml | olive oil |
| 1/2 tsp | 2.5 ml | dried oregano |
| 1/2 tsp | 2.5 ml | dried basil |
| 1/2 tsp | 2.5 ml | dried thyme |
| 1/4 tsp | 1.3 ml | dried rosemary |
| 1/4 tsp | 1.3 ml | garlic powder |
| 1/2 tsp | 2.5 ml | salt |
| 1/4 tsp | 1.3 ml | pepper |
Instructions
- Cut the pork tenderloin into 1-inch cubes. In a medium bowl, combine the zucchini, yellow squash, red bell pepper and red onion.
- Add the olive oil and the Tuscan seasoning blend to the vegetables and toss until coated.
- Thread the pork cubes onto skewers along with the zucchini, yellow squash, red pepper and onion.
- Grill for 8-10 minutes, until the meat is done to your liking and reaches an internal temperature of 145°F (63°C).
- Remove from the grill and serve.
