Ham and Pepperoni Rice Balls

Italian-style fried rice balls (arancini) with mozzarella, parmesan and diced ham or pepperoni, served with marinara sauce. Sweet and flavorful - kids and adults will surely love them.

Ingredients

2 cups480 mlcooked white rice
1/4 cup60 mlshredded mozzarella
1/2 cup120 mlgrated parmesan
1/2 cup120 mldiced ham or pepperoni minis
1 cup240 mlItalian-style breadcrumbs
3eggs
oil, for frying
marinara sauce, to serve

Instructions

  1. Preheat oil in a medium pot, using enough oil to fry the rice balls (about 4 inches deep).
  2. In a medium bowl, combine the parmesan, rice, mozzarella and one egg. Cool the rice first and use your hands to mold.
  3. Add the pepperoni or diced ham and combine into the mixture with your hands.
  4. Form each rice ball by putting 2 tablespoons of the mixture into your hands; press and squeeze firmly to create a ball.
  5. In a small bowl, whisk the two remaining eggs. Scatter the breadcrumbs in a separate dish.
  6. Dip each rice ball in the egg, then coat in the breadcrumbs.
  7. When the oil is hot, add 3 breaded rice balls and fry for about 5 minutes.
  8. Remove the fried rice balls and transfer to a paper-towel-lined plate. Repeat until all the mixture is used.
  9. Serve with marinara sauce.
