Herb Pizza Dough Recipe

Ingredients

1 packageActive dry yeast
1 teaspoon5 mlSugar
7/8 cup210 mlWarm water - 110 degrees
1/4 cup60 mlItalian seasoning
2 1/4 cups540 mlFlour
1 tablespoon15 mlFlour
1/2 teaspoon2.5 mlSalt
1 tablespoon15 mlGarlic and olive oil - as needed
Oil and cornmeal for bread

Instructions

  1. Mix the yeast, sugar, and warm water. Let stand until foamy, about 10 minutes.
  2. In the work bowl of a food processor equipped with a steel blade, chop the herbs. Turn off the machine. Add flour and salt.
  3. Turn the machine on and off a couple of times. While the machine is running, add yeast. Process until the dough forms a ball on the side of the bowl. Add the garlic olive oil and process for 30 to 40 seconds more.
  4. Transfer the dough to a bowl that has been greased with olive oil. Turn the dough until the entire surface has been coated with the oil. Cover the container with a damp towel and let it rise in a warm, draft-free place for 1 hour or until doubled.
  5. Stretch over a lightly floured surface and if the dough is too elastic, try tossing it from one hand to the other to flatten it. Lightly grease the pizza pan with a little oil and sprinkle with cornmeal. Place the dough in the pizza pan and trim the edges. Bake for 10 minutes at 425 degrees.
  6. Remove from oven, lightly brush the crust with a little more oil. Top as desired. Makes enough dough for one 12" crust.
