Homemade Chicken Bologna Made in a Ham Maker

A tender, garlicky chicken bologna pressed and gently poached in the ham maker for clean, deli-style slices.

Ingredients

2 lb905 gground chicken (or other meat of choice)
100 mlwater
1.5 tsp7.5 mlgelatin
1.5 tsp7.5 mlsalt
1 clovegarlic, minced
spices of choice (onion, pepper, marjoram, parsley)

Instructions

  1. In a bowl, combine the ground chicken with the salt, minced garlic and your chosen spices.
  2. Stir the gelatin into the water and add it to the meat. Knead thoroughly until the mixture is sticky and even, keeping everything well chilled.
  3. Pack the mixture tightly into the ham maker, pressing out any air pockets, and close the press with the springs engaged.
  4. Chill the packed ham maker in the fridge for 12–24 hours so the cure and gelatin set.
  5. Cook the ham maker in an 80–85 °C water bath until the core reaches about 70–75 °C.
  6. Shock-chill in cold water, then rest in the fridge overnight before unmoulding and slicing thin.
