Honey Cookies - My Interpretation

Spiced honey cookies shaped into little balls; store them with a slice of apple to keep them soft.

Ingredients

2eggs
1 cup240 mlsugar
300 ghoney
1 cup240 mloil
2 sachetsvanilla
1cinnamon, clove, nutmeg, cardamom
1 tsp5 mlbaking soda
600-700 gflour (as much as it takes, about 600-700 g)

Instructions

You can use a little more honey at the expense of the sugar. Melt the honey and sugar on the stove until they reach a smooth consistency, then add the cinnamon and vanilla. Transfer to the kneading bowl and add the eggs one at a time, then the oil and the baking soda, stirring all the while - it becomes foamy. Gradually add the flour and stir until it becomes hard to work with the mixer. Finish kneading by hand, adding a little flour until it stops sticking. You get a soft, glossy dough. I used about 670 g flour; it still stuck a little but I shaped them with wet gloves and they turned out great - I did not even have to flatten them. Shape balls the size of a walnut and flatten them slightly in the centre. Bake at 170°C for about 10 minutes. They turn out firm and very tasty, but if you want them soft, put 1-2 apple slices in their container.
