Classic trussing technique (reconstructed): Step 1: Place the chicken breast-side up with the legs pointing toward you. Season the cavity. Step 2: Slide the middle of a length of kitchen twine under the tail and cross the two ends over the tips of the drumsticks. Step 3: Pull the twine to draw the legs together, cross the ends and loop them around the ends of the drumsticks, then pull tight to close the cavity. Step 4: Run each end of the twine along the sides of the bird, between the thighs and the breast, pulling snugly to tuck the wings against the body. Step 5: Flip the chicken over and tie the two ends together in a firm knot over the neck/backbone. Trim excess twine. Trussing gives an even, compact shape for uniform cooking.
