Instant Idli (Rice Flour Idli)
How to make rice flour idli — a quick, no-grinding, no-fermentation South Indian steamed rice cake.
Ingredients
| 2 cups | 480 ml | Rice flour |
| 2 tbsp | 30 ml | Curd |
| 2 cups | 480 ml | Water (approx) |
| to taste | Salt | |
| 3/4 tsp | 3.8 ml | Eno / baking soda |
| — | Oil for greasing idli plate |
Instructions
- In a wide bowl add rice flour, salt and curd. Mix well.
- Now add water gradually to form a thick idli batter. When the batter is prepared, allow it to rest for 10 to 15 minutes.
- Meanwhile grease the idli plates with oil. Heat water in the idli steamer. After 15 minutes add the eno to the batter and mix well. Immediately you will see the batter getting frothy and doubling in quantity.
- Pour a ladle of idli batter into each oil-greased idli mould.
- Now keep the idli plates with batter in the idli steamer and steam for 12 to 15 minutes. When the idli is done, remove from the steamer and let it sit for 5 minutes.
- After 5 minutes gently scoop the idli with a spoon and serve it hot with chutney and sambar!
