Instructions

- Rub the debris off the mushrooms and bell pepper and chop both into thin slices. Set to the side.
- Use a cheese grater on the largest holes to shred the carrot fully. Set aside.
- Adjust the temperature to the lowest setting on the function of Sauté.
- Blend the sesame oil and garlic in the cooker and warm for approximately 90 seconds.
- Turn the pot off and combine the sriracha, ginger, brown sugar, rice vinegar, soy sauce, and vegetable stock until integrated.
- Snap the noodles in half, distribute inside the pot, and cover completely with the soup.
- Layer the snow peas, carrots, broccoli, mushrooms and bell pepper on top with the heavier vegetables on the bottom.
- Put the Instant Pot on the highest pressure setting on Pressure Cooking for 5 minutes after moving the valve to Sealing.
- Perform the Quick Release by adjusting the valve to Venting to remove all the pressure in the pot and serve while hot.
Variation Tips:
- For the noodles, you can choose to use Lo-Mein or linguine. Refrain from using whole wheat noodles in the Instant Cooker, as they will not properly cook as required with the combination of the vegetables.
- Feel free to substitute your favorite vegetables in this recipe. Some examples that would suit are scallions, celery, spinach, bok choy, cabbage, and baby corn.
- If you want a spicy Lo Mein, include a few drops of hot chili oil just before serving.
