Invisible Apple Cake (Spiced)

A spiced version of the invisible apple loaf cake, seasoned with cinnamon, nutmeg, ginger and cloves.

Ingredients

1 cup240 mlall purpose flour
1 tsp5 mlbaking powder
1/2 tsp2.5 mlcinnamon
1/4 tsp1.3 mlnutmeg
1/4 tsp1.3 mlginger
pinchcloves
1/4 tsp1.3 mlsalt
2 tbsp30 mlmelted butter (unsalted)
1/2 cup120 mlwhole milk (room temp)
1 tsp5 mlvanilla extract (or vanilla bean paste)
3large eggs
2/3 cup160 mlgranulated sugar
2 lb905 gapples, peeled and sliced 1/8-inch thick

Instructions

  1. Preheat oven to 375˚F. Grease and line a loaf pan with parchment paper.
  2. Using a knife or a mandoline, slice apples into 1/8" slices.
  3. In a bowl, whisk together the flour, baking powder and spices.
  4. In a separate small bowl, whisk together melted butter, milk and vanilla.
  5. In a separate large bowl, beat eggs and sugar for 90 seconds on medium speed, until pale. Add half of the flour mixture and mix on low speed until combined, then add the butter/milk mixture, then the remaining flour, mixing just until the batter comes together.
  6. Add the apples to the bowl and gently toss until they are evenly coated in the batter.
  7. Layer the apples into the prepared loaf pan. Pour any remaining batter in the pan.
  8. Bake for 70-75 minutes, until golden brown around the edges and a toothpick comes out clean. Let cool for a few hours before slicing and serving. If it's still too moist when you cut into the cake, refrigerate the cake for a few hours to set.
