
Invisible Ghost Apple Pie (Sicily)
A Sicilian-style 'invisible' apple cake — a thin pancake-like batter loaded with so many apple slices that the batter almost disappears.
Ingredients
| 2 | eggs | |
| 60 g | sugar | |
| 30 ml | olive oil (or oil) | |
| — | lemon zest | |
| 100 g | sifted flour | |
| 2 tsp | 10 ml | baking powder |
| 100 ml | milk | |
| 5 | apples |
Instructions
- Beat the eggs and sugar to a creamy mixture.
- Add the olive oil (or oil) and the lemon zest and beat again.
- Add the flour and baking powder and beat again.
- Add the milk in parts and beat again to a mixture similar to pancake batter.
- Slice the apples, pour them into the mixture and stir well until they are coated with batter.
- Pour the mixture into a 20 cm cake tin lined with paper. Level it and bake in an oven preheated to 180°C for 40 min.
