Japanese Beef Croquettes

If you're a beef and potato person, these crunchy beef and potato croquettes are for you. Serve them with the Tonkatsu sauce in this book.

Ingredients

3peeled and diced russet potatoes
2 tbsp.30 mlbutter
1 tbsp.15 mlcanola oil
3chopped onions
1 lb.455 gground beef
1 tbsp.15 mlgrated ginger
1 tsp.5 mlgarlic powder
2 tbsp.30 mlsoy sauce
2beaten eggs
1 cup240 mlPanko breadcrumbs
1/3 cup80 mlvegetable oil

Instructions

  1. Cut the potatoes into quarters and cook in a pan of salted water until done, around 15-20 minutes.
  2. Place the cooked potatoes in a bowl and mash them.
  3. Add the butter and set aside.
  4. Heat the oil in a skillet and caramelized the onions for 20 minutes.
  5. While the onions are cooking, combine the ground beef, ginger, garlic, salt and pepper in a bowl.
  6. Add the beef mixture to the onions and drizzle with soy sauce.
  7. Cook until the beef is done and there is no liquid.
  8. Add the beef/onion mixture to the mashed potatoes and combine thoroughly.
  9. Heat 1/3 cup vegetable oil in a clean skillet.
  10. Create 10 patties.
  11. Place the beaten eggs in one shallow bowl and the breadcrumbs in another.
  12. Dredge each patty through the eggs and breadcrumb.
  13. Fry for 5 minutes each side, until they are browned and crunchy.
