Japanese Beef Croquettes
If you're a beef and potato person, these crunchy beef and potato croquettes are for you. Serve them with the Tonkatsu sauce in this book.

Ingredients
| 3 | peeled and diced russet potatoes | |
| 2 tbsp. | 30 ml | butter |
| 1 tbsp. | 15 ml | canola oil |
| 3 | chopped onions | |
| 1 lb. | 455 g | ground beef |
| 1 tbsp. | 15 ml | grated ginger |
| 1 tsp. | 5 ml | garlic powder |
| 2 tbsp. | 30 ml | soy sauce |
| 2 | beaten eggs | |
| 1 cup | 240 ml | Panko breadcrumbs |
| 1/3 cup | 80 ml | vegetable oil |
Instructions
- Cut the potatoes into quarters and cook in a pan of salted water until done, around 15-20 minutes.
- Place the cooked potatoes in a bowl and mash them.
- Add the butter and set aside.
- Heat the oil in a skillet and caramelized the onions for 20 minutes.
- While the onions are cooking, combine the ground beef, ginger, garlic, salt and pepper in a bowl.
- Add the beef mixture to the onions and drizzle with soy sauce.
- Cook until the beef is done and there is no liquid.
- Add the beef/onion mixture to the mashed potatoes and combine thoroughly.
- Heat 1/3 cup vegetable oil in a clean skillet.
- Create 10 patties.
- Place the beaten eggs in one shallow bowl and the breadcrumbs in another.
- Dredge each patty through the eggs and breadcrumb.
- Fry for 5 minutes each side, until they are browned and crunchy.
