Japanese Daifuku Sweets
Traditional Japanese daifuku — soft microwave mochi wrapped around anko (sweet red azuki bean paste). Makes 12.
Ingredients

| 1/4 ч.ч. | sugar |
| 2/3 ч.ч. | water |
| 2/3 ч.ч. | water (for filling) |
| 1 ч.ч. | sugar (for filling) |
| 1 и 1/4 | anko paste (from azuki beans) |
| — | corn (or potato) starch, for dusting |
Instructions
For the filling (anko): Heat the water (2/3 cup) together with half a cup of sugar in a small saucepan. Add the red bean paste to it and stir well. Divide the mixture into 12 balls and set aside.
For the dough (mochi): Place the rice in a heat-resistant deep dish. Combine the remaining water and sugar in a small bowl and gradually add to the rice. Stir.
Put the bowl in the microwave for 2 minutes. Stir again and heat in the microwave. Stir with quick movements.
Dust the bottom of a flat tray with corn starch and flour your hands as well. The dough (mochi) should be quite hot, so be careful.
Divide it into 12 pieces. Place some filling into each and wrap the mochi around it. Repeat the process until the quantities are used up.
Prep time: 2 hours. Cook time: 30 minutes. Serves 12.
