| 7 g | instant dry yeast | |
| 7 g | sourdough extract (may skip) | |
| 1 1/2 tsp | 7.5 ml | salt |
| 375 ml | warm water | |

Combine the bread flour, instant dry yeast, sourdough extract (may skip), and salt. Add the warm water and knead into a smooth, elastic dough. Cover and let rise until doubled, about 1 hour. Divide into 6â8 pieces, shape into balls and form the classic Kaiser knot (or press with a Kaiser stamp). Place on a lined tray, cover and proof about 30 minutes. Brush the tops with beaten egg and sprinkle generously with sesame seeds. Bake in a preheated oven at about 220°C until golden, roughly 15â20 minutes.
