
Baked Potato Patties
Ingredients
| — | 1 kilogram boiled and peeled potatoes |
| — | 2 eggs |
| — | 180 grams cheese (sirene) |
| — | 3 tablespoons breadcrumbs |
| — | 2 stalks green onion (no more) |
| — | 2 tablespoons finely chopped dill |
| — | 2 tablespoons finely chopped parsley |
| — | about 20 grams butter |
| — | salt |
| — | 2 tablespoons flour plus 2 tablespoons breadcrumbs for rolling before baking (flour and breadcrumbs are mixed together) |
Instructions
- Start by boiling the potatoes. Peel them, cut them in half, cover with water and add salt. Once they come to a boil and soften, drain and let them cool completely. For this recipe you will need one kilogram of boiled and peeled potatoes.
- Mash the cooled potatoes with a ricer or fork. Even if a small piece remains it is not fatal.
- Add the crumbled cheese and the eggs.
- Add the finely chopped green onion. Do not replace it with regular onion.
- Add the three tablespoons of breadcrumbs and the green herbs.
- Knead everything by hand. If needed, add a little more salt. You must judge this yourself. If raw eggs in the mixture do not bother you, taste it.
- Line the bottom of a large tray with paper. Form patties the size of a small tangerine and arrange them a little apart from each other, first rolling them in the flour and breadcrumbs mixture. Make a small hole in each patty. Place a pea-sized bit of butter in each hole. If the butter is cold it will be easier for you.
- Preheat your oven to 230 degrees with the fan on. Bake the patties until they turn golden.
I serve my potato patties with a sauce I make from two hundred grams of yogurt, one hundred grams of table mayonnaise and a tablespoon of finely chopped dill.
