Keto Chicken Parmesan
A low-carb pressure-cooker chicken parmesan: chicken cutlets nestled in garlicky marinara, topped with melted mozzarella and Parmesan, with broccolini steamed on the trivet above.

Ingredients

| 4 1/2 tablespoons | 68 ml | grated Parmesan cheese, divided |

| 6 | thin chicken breast cutlets | |
| 3/4 teaspoon | 3.8 ml | salt, or more to taste |
| 3/4 teaspoon | 3.8 ml | dried oregano |
| 1 1/2 bunches | broccolini | |
| 6 ounces | 170 g | fresh mozzarella cheese, grated |

- Heat olive oil in the inner steel pot of the pressure cooker set to Saute on Normal. Add garlic and cook until just turning golden, about 1 minute. Stir marinara sauce, 3 tablespoons Parmesan cheese, and black pepper into the garlic. Press Cancel.
- Season chicken with salt, oregano, and black pepper. Nestle chicken into the sauce, then spoon sauce over the chicken to cover.
- Place trivet over the chicken in the pressure cooker and place broccolini onto the trivet.
- Lock pressure cooker lid into place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 3 minutes on Low Pressure. Set steam vent handle to Venting to quick-release pressure. A thermometer inserted near the center of each chicken cutlet should read at least 165 F (75 C).
- Remove trivet with broccolini and set aside.
- Sprinkle mozzarella cheese and the remaining Parmesan cheese evenly over the chicken. Cover the pot with the lid (but don't lock it on) and let sit until cheese is melted, 4 to 5 minutes. Transfer chicken and sauce to serving plates and place broccolini next to the chicken. Sprinkle basil over the chicken.
Mealthy Tip: For a little bit of crispiness, turn on the oven's broiler. Transfer chicken and sauce to an oven-safe dish and place in the oven until cheese is golden and bubbling, 2 to 3 minutes. Or use the CrispLid! Set CrispLid on top of inner steel pot and plug in. Set to 500 F (260 C) and cook for 1 to 2 minutes. Most prepared marinara sauces contain sugar, which isn't keto. Read the label on the sauce to be sure there isn't sugar. Or make your own marinara sauce!
