Cinnamon Rolls

Keto cinnamon rolls made with a mozzarella-based (fathead) dough, topped with a cream cheese frosting.

Ingredients

2 cups480 mlMozzarella cheese
3/4 cup180 mlalmond flour
1 teaspoon5 mlbaking powder
3 tablespoons45 mlcream cheese
1 tablespoon15 mlStevia or Swerve
1 teaspoon5 mlcinnamon
1egg
1/8 stickbutter (melted)
SprinkleStevia or Swerve (for the inside of the dough)
2 tablespoons30 mlheavy cream (frosting)
2 tablespoons30 mlcream cheese (frosting)
1 tablespoon15 mlpowdered Swerve (frosting)
1/4 teaspoon1.3 mlvanilla (optional, frosting)

Instructions

  1. Combine the mozzarella cheese and cream cheese in a microwave-safe bowl and cook it on high for about 1 minute. (You can melt these ingredients over the stovetop on low if you prefer.)
  2. After the cheese has melted, add one egg, almond flour, and baking powder. Save the cinnamon and stevia to sprinkle on the dough after you roll it out.
  3. Carefully stir the ingredients until all is well combined and smooth. This will cool down the dough a bit too.
  4. The dough will be extremely sticky at this point. Next, dump the dough onto a sheet of parchment paper and begin to knead the dough until all the ingredients are fully mixed in. The dough will be really sticky until you knead it together. You can sprinkle a little bit of almond or coconut flour on the dough to roll it out and prevent sticking too.
  5. Use a rolling pin to smooth out the dough into a large rectangle shape. Roll this dough out in between two sheets of parchment paper or a silicone mat with a piece of parchment paper on top of it.
  6. Melt the 1/8 stick of butter and spread it sparingly over the rolled out dough. Sprinkle cinnamon and stevia sweetener onto the dough.
  7. Roll up the dough as seen in the photos.
  8. Use a piece of string to cut the dough into 15 different cinnamon rolls.
  9. Place a piece of parchment paper in the bottom of your pan to line it before baking. Place the rolls in a baking pan.
  10. Set the oven to 350 degrees and bake them for about 20 minutes or until golden brown. NOTE: You may have to cook them longer if you cut the rolls thicker. Cook them until they are golden brown and done in the middle.
  11. While the cinnamon rolls are baking in the oven, you can begin to mix up the frosting. Combine the heavy cream, cream cheese, and powdered sweetener into a bowl and mix it with a mixer on high speed until the ingredients are nice and smooth.
  12. Allow the cinnamon rolls to cool for about 5 or 10 minutes before applying the cream cheese frosting.

Optional: Feel free to add a few crushed pecans to the top of your delicious keto cinnamon rolls!
