Ingredients

2 lbs905 gfatty ground beef, preferably grass fed
2whole eggs
3scallions, chopped
1large yellow onion, chopped
3garlic cloves, minced
1 handfulraw spinach
3-4 oz85–115 gchevre goat cheese
2 Ttomato paste
4 shakescayenne pepper
3-finger pinchoregano
2 three-finger pinchessalt
6 coarse grindspepper
1 sprigrosemary

Instructions

  1. Preheat oven to 425 degrees F.
  2. Add 2 lbs of meat and 2 eggs into a mixing bowl. Add finely chopped scallions, garlic and onions. Mix it up together.
  3. Add cayenne, oregano, salt, pepper and mix up again.
  4. Throw down some plastic wrap on the counter and then roll out your meat on top of it. Try to flatten it out and create a rectangle, then add the spinach and goat cheese to the middle.
  5. Using one side of the plastic wrap, flap one side into the middle, then do the same to the other, so they create a roll.
  6. Dress up the top with your tomato paste (or leave it dry to make it more keto friendly), sprinkle some rosemary on top.
  7. Cook about 50-60 minutes until the middle hits about 150 degrees.
  8. Cut it in half to make sure everything's cooked, then cut into slices and enjoy!
