
Kheema Matar (Spiced Ground Beef)
I love making this super hands-off Indian kheema. I'm not a fan of mixing sweet spices like cinnamon and cardamom with savory meats, but I made this low-carb, high-fat Indian kheema without the sweet spices, and it is just not the same. You don't taste the sweetness when eating it, just a wonderful complex flavor that will make it difficult to believe you spent less than 30 minutes cooking it. Adjust the cayenne to your spice preference as desired.

Ingredients

| 4 | green or white cardamom pods | |
| 1 cup | 240 ml | chopped onion |
| 1 tbsp | 15 ml | minced garlic |
| 1 tbsp | 15 ml | minced ginger |
| 1 pound | 455 g | lean ground beef |
| 1 tsp | 5 ml | Garam Masala |
| 1 tsp | 5 ml | salt |
| 0.5 tsp | 2.5 ml | ground turmeric |
| 0.5 tsp | 2.5 ml | ground cayenne pepper |
| 0.5 tsp | 2.5 ml | ground coriander |
| 0.5 tsp | 2.5 ml | ground cumin |
| 0.25 cup | 60 ml | water |

Kheema Matar — Spiced Ground Beef
SERVES 4. Prep time: 15 minutes. Sauté: 10 minutes. Manual: 5 minutes high pressure. Release: Natural 10 minutes, then Quick. Total time: 50 minutes.
- In a small bowl, measure out the peas and set them aside to thaw.
- Preheat the Instant Pot® by selecting Sauté and adjusting to More for high heat. When the inner cooking pot is hot, add the ghee and heat until it is shimmering. Add the cinnamon sticks and cardamom and let them sizzle for 10 seconds.
- Add the onion, garlic, and ginger and sauté for 3 to 5 minutes, until the onion has softened.
- Add the ground beef and sauté long enough to break up the clumps, 3 to 4 minutes.
- Add the garam masala, salt, turmeric, cayenne, coriander, cumin, and water.
- Lock the lid into place. Select Manual and adjust the pressure to High. Cook for 5 minutes.
- When the cooking is complete, let the pressure release naturally for 10 minutes, then quick-release any remaining pressure.
- Unlock and remove the lid. Mix in the peas, let them heat through, and serve.
