
Kheema Nariyal Saag (Ground Beef Coconut Curry and Spinach)
If you grew up eating Indian foodāeither at home or in a restaurantāyou're likely to have seen the word saag before. Any dish you add greens to is a saag, and typically it's spinach, as used here. This curry takes on an extra-rich flavor and thickness with the addition of coconut milk. Coconut milk tends to get a little thin when pressure cooked, so you add half at the beginning and save the other half to add after the dish is cooked.

Ingredients
| 1 tbsp | 15 ml | ghee or vegetable oil |
| 2 tsp | 10 ml | cumin seeds |
| 4 tbsp | 60 ml | minced garlic |
| 2 tbsp | 30 ml | minced ginger |
| 1 pound | 455 g | ground beef |
| 2 cup | 480 ml | diced onion |
| 1 cup | 240 ml | chopped tomato |
| 1 | green serrano or jalapeƱo chile, minced | |
| 1 tsp | 5 ml | ground turmeric |
| 0.5 tsp | 2.5 ml | ground cayenne pepper |
| 1 tsp | 5 ml | ground coriander |
| 2 tsp | 10 ml | Garam Masala |
| 2 tsp | 10 ml | salt |
| 4 cup | 960 ml | chopped spinach, or more to taste |
| 0.25 cup | 60 ml | water |
| 1 can | coconut milk, divided (15-ounce can) |
Instructions
Kheema Nariyal Saag ā Ground Beef Coconut Curry and Spinach
SERVES 4. Prep time: 15 minutes. SautƩ: 7 minutes. Manual: 10 minutes high pressure. Release: Natural. Total time: 60 minutes.
- Preheat the Instant Pot® by selecting Sauté and adjust to More for high heat. When the inner cooking pot is hot, add the ghee.
- When the ghee is shimmering, add the cumin seeds and cook until they sputter like popcorn popping, about 1 minute.
- Add the garlic and ginger, and cook for 1 to 2 minutes or until they start to sizzle and flavor the oil.
- Add the ground beef and cook, stirring occasionally, until the lumps have largely broken up, about 4 minutes.
- Add the onion, tomato, chile, turmeric, cayenne, coriander, garam masala, salt, spinach, water, and half the can of coconut milk. Stir to combine.
- Lock the lid into place. Select Manual and adjust the pressure to High. Cook for 10 minutes.
- When the cooking is complete, let the pressure release naturally.
- Unlock the lid and stir in the remaining half of the coconut milk to add thickness.
- If you like, add more spinach and stir until it's wilted.
