Kobe Beef Burger with Caramelized Onion and Goat Cheese

Mealthy Tip: Trying to go low-carb? Treat yourself to this burger using lettuce instead of a bun for a healthy low-carb meal. Serve this burger with a fresh kale salad with lemon juice and olive oil and a sprinkling of pistachios for a complete meal. A nice amber or IPA beer would be a refreshing complement to this burger. Going alcohol-free? Have a ginger beer instead!

Ingredients

1 1/2 tablespoons23 mlghee
5yellow onions, thinly sliced
1 tablespoon15 mlfine sea salt
3/4 teaspoon3.8 mlfreshly ground black pepper
4 pounds1.8 kgground kobe beef
salt and ground black pepper to taste
8pretzel burger buns
8slices goat cheese

Instructions

  1. Melt ghee in a large skillet over medium-high heat; add onions. Season onions with sea salt and freshly ground black pepper, reduce heat to low, and cook, stirring regularly, until the onions are caramelized, about 30 minutes.
  2. Preheat an outdoor grill to medium-high.
  3. Shape beef into 6 patties; season with salt and pepper.
  4. Cook patties on hot grill to desired doneness, 3 to 5 minutes per side for medium.
  5. Serve burgers on toasted pretzel buns; top each with 2 to 3 tablespoons caramelized onion and one slice goat cheese.
