Korean Steamed Egg (Gaeran Jim)

A soft, savory Korean steamed egg custard seasoned with scallions. Recipe Variations: experiment with chili pepper flakes, sesame seeds and small-diced vegetables (mushrooms, sweet bell peppers, zucchini, sweet corn); substitute broth (beef, chicken, seafood or vegetable) for the water for a robust flavor; swap some of the salt for soy sauce; or top with a sprinkling of cheese for a non-traditional touch. Ingredients

4eggs
3/4 cup180 mlwater
1 tsp5 mlsalt
1scallion, chopped

Instructions

  1. Gather the ingredients.
  2. In a heat-safe bowl (porcelain or stoneware work best), whisk together the eggs, water, salt and scallions until fully combined.
  3. If using a microwave, cover the bowl with a plate and cook for 4 minutes.
  4. If steaming on a stovetop, add the bowl to a steamer and steam for 10 minutes over medium-high heat.
  5. Serve and enjoy!

Tip: If you don't have a steamer, put the heatproof bowl in a large pot with a few inches of water at the bottom and steam for 15 minutes over medium-low heat. The water should go only halfway up the bowl.
