Kushikatsu - Pork
Thin-sliced pork skewered, crumbed, and fried — the Osaka classic that started a whole genre.
Ingredients
| 7 oz (200g) | pork loin, cut into 1-inch (2.5cm) cubes | |
| 1 teaspoon | 5 ml | soy sauce |
| to taste | salt and pepper | |
| 1/2 cup (60g) | all-purpose flour | |
| 2 | eggs, beaten with a little water | |
| 1 cup (80g) | fine panko breadcrumbs | |
| — | vegetable oil for frying | |
| 4 | bamboo skewers, soaked |
Instructions
- Season pork cubes with soy sauce, salt, and pepper. 2. Thread 3–4 pieces onto each skewer. 3. Coat in flour, then egg wash, then panko — pressing firmly. 4. Heat oil to 350°F (175°C) and fry skewers for 2–3 minutes until golden. 5. Drain briefly and dip in kushikatsu sauce to serve.
