Larded Beef Tongue
Instead of garlic and smoked bacon, the tongue can be larded with almonds peeled and cut into slivers.
Ingredients
| 1 pcs | beef tongue | |
| 2-3 | garlic cloves | |
| 50 g | smoked bacon | |
| 1 tbsp | 15 ml | fat |
| 1 coffee cup | white wine | |
| — | salt |
Instructions
- Boil the tongue in salted water, peel it and with a sharp knife make incisions, into which you insert strips of garlic and smoked bacon.
- In a small baking dish put the fat, the larded tongue and the wine, cover (with aluminum foil) and roast in a moderate oven. During roasting, baste with the sauce.
- Cut the cooled tongue into thin slices. Arrange on an oval plate and garnish as desired.
