Larded Beef Tongue

Instead of garlic and smoked bacon, the tongue can be larded with almonds peeled and cut into slivers.

Ingredients

1 pcsbeef tongue
2-3garlic cloves
50 gsmoked bacon
1 tbsp15 mlfat
1 coffee cupwhite wine
salt

Instructions

  1. Boil the tongue in salted water, peel it and with a sharp knife make incisions, into which you insert strips of garlic and smoked bacon.
  2. In a small baking dish put the fat, the larded tongue and the wine, cover (with aluminum foil) and roast in a moderate oven. During roasting, baste with the sauce.
  3. Cut the cooled tongue into thin slices. Arrange on an oval plate and garnish as desired.
