
Layered Banitsa (Nalozhena Banitsa)
A simple layered Bulgarian banitsa made by stacking sheets of phyllo (Odrin-style or ordinary) with an egg-and-cheese filling.
Ingredients
| 1 package | package of Odrin-style phyllo sheets / or ordinary phyllo sheets |
| 5 | eggs |
| 300 гр | cheese |
| 400 гр | yogurt |
| 1 ч.л | baking soda |
| — | oil for sprinkling the sheets |
Instructions
- In a suitable bowl, pour in the yogurt and add the baking soda. Let it foam up.
- Add the eggs. Stir well.
- In a greased pan, place one layer of phyllo sheets (if they hang over the edge of the pan, just tuck them inside). Sprinkle with oil, spread with the egg filling and top with crumbled cheese.
- Then lay a second layer of sheets, egg filling, cheese, and so on until you run out of sheets. If you have any egg mixture left, spread it over the top of the banitsa and sprinkle with oil.
- Bake at 180 degrees until golden, about 35 minutes.
- If you like a soft crust, after taking the banitsa out sprinkle it with water and cover it with a towel.
