
Le Frittelle di San Giuseppe for Father's Day
Italian St. Joseph's Day rice fritters scented with orange and vanilla, fried golden and dusted with icing sugar to serve piping hot.
Ingredients
| 500 g | pudding rice | |
| 2 l | water | |
| 2 pinches | salt | |
| 1 | orange zest | |
| ½ spoon | vanilla | |
| 5 tbsp | 75 ml | caster sugar |
| 75 g | flour | |
| 250 ml | oil, for frying |
Instructions
- Cook the rice, adding the salt and the orange zest. When it starts boiling, add the sugar and vanilla, then lower the heat and let it cook until all the water has been absorbed. It has to look like a big lump. Leave it to set overnight.
- When you are ready to start making the frittelle, add the flour and mix well.
- With the help of a teaspoon, form small balls and drop them into hot frying oil. Let them cook, turning them regularly with a slotted spoon, until they have a golden colour.
- Drain the frittelle and leave them on a plate with kitchen paper. Sprinkle with icing sugar immediately. It is best to make a few at a time so you can enjoy them, as they should be, really hot. Happy Father's Day and San Giuseppe to all fathers in the world!
