Le Frittelle per la Festa del Papà (Father's Day Rice Fritters)

Traditional Italian rice fritters flavoured with orange, vanilla and sweet liqueur, fried golden and rolled in sugar for Father's Day.

Ingredients

750 mlmilk
750 mlwater
300 grice
150 gsugar
3eggs
a pinchsalt
1orange rind, grated
1 sachetvanilla aroma (vanillina)
50 mlsweet liqueur
2 heaped tspbaking powder
a littleflour
oil, for deep frying
sugar, for dusting

Instructions

  1. It is best to start the evening before: put the milk, water and salt in a saucepan and heat it up. When it starts boiling, add the rice and leave to cook, stirring from time to time. Turn off the heat and add the sugar, mixing well.
  2. The next morning, add the eggs, orange rind, vanilla and liqueur, and mix well with a wooden spoon. Add a few tablespoons of flour and stir well for a long time. The mixture is ready when the wooden spoon can stand up by itself. Add the baking powder and mix again.
  3. Put plenty of oil for deep frying in a frying pan. When the oil is hot, drop in a few spoonfuls of the rice mixture at a time.
  4. When the frittelle are nice and golden, scoop them out and put them to drain on kitchen paper, then roll them in sugar. Serve warm. Buona Festa del Papà — and mind your cholesterol!
