
Lemon Butter Grilled Lobster Tails
Split lobster tails grilled until the shells turn bright red, then finished with a fragrant lemon, thyme and garlic butter.

Ingredients
| 1/4 cup | 60 ml | ghee or butter, melted |
| 1/2 | lemon, juiced | |
| 1 tbsp | 15 ml | fresh thyme |
| 1 | garlic clove, minced (omit for low FODMAP) | |
| 1/8 tsp | 0.6 ml | sea salt |
| 1/8 tsp | 0.6 ml | paprika |
| 4 | lobster tails | |
| 1 tbsp | 15 ml | avocado oil |
| — | sea salt | |
| — | ground black pepper |
Instructions
- Preheat the grill to medium-high heat.
- Mix together the melted butter, lemon juice, thyme, garlic, sea salt and paprika, and set aside.
- Using kitchen shears, cut down lengthwise through the centres of the softer bottom shells of the lobster tails. Be careful not to cut through the top shells.
- Brush the cut side with avocado oil, then sprinkle with salt and pepper.
- Place the tails cut side down on the heated grill for 5 minutes, until the top shells are bright red.
- Flip the tails over and spoon the lemon butter mixture on top of each tail.
- Grill for 4-5 more minutes.
- Serve the lobster tails with the rest of the lemon butter.
