Lemon Cheesecake Cookies
Soft cookies with a creamy lemony center.

Ingredients
| 1 Ā¼ cups | flour |
| Ā¼ tsp | baking powder |
| Ā¼ tsp | salt |
| Ā¼ cup | sugar |
| Ā¼ cup | butter |
| 1 | egg |
| 1 | zest of lemon |
| 4 oz | cream cheese |
| 2 tbsp | sugar |
| 1 tsp | lemon juice |
Instructions
- Cream butter and sugar, add egg and lemon zest.
- Mix in flour, baking powder, salt.
- Separately, mix cream cheese, sugar, lemon juice.
- Scoop dough, flatten, add a spoon of cream cheese, fold over.
- Bake at 175Ā°C (350Ā°F) for 10-12 minutes.
