Lemon Pizzelle

Ingredients
| 1 cup | 240 ml | white granulated sugar |
| 1/2 tsp | 2.5 ml | vanilla or lemon extract |
| 1 tsp | 5 ml | baking powder |
| 2 cup | 480 ml | all-purpose flour |
| 2 | lemons | |
| 4 | large eggs | |
| for dusting | powdered sugar, for dusting | |
| 10 tbsp | 150 ml | unsalted butter |

- Warm up the pizzelle.
- Use a medium-sized bowl to mix the flour and baking powder.
- Whisk the eggs and sugar in a bowl for about 30 seconds or until the mixture is pale yellow. Whisk in the vanilla (or lemon) extract.
- Gradually add the flour mixture to the egg mixture while mixing in the melted butter. Add the lemon zest and stir until it's mixed (the batter will be thick). Do not mix too much.
- Drop the batter on the hot pizzelle iron with a cookie scoop, placing it right in the middle of the patterns. Cook until lightly golden brown, following the manufacturer's directions. After taking them out, the cookies will get crisp again after being soft at first.
- To cool, lay the cookies out flat. Do it again with the rest of the batter. When the cookies are cool, sprinkle powdered sugar on top of them.
