
Masala Street Corn
Charred grilled corn brushed with a warm garam-masala ghee and finished with lime, an Indian twist on street-style corn.

Ingredients
| 4-6 | corn on the cob, shucked | |
| 1/4 cup | 60 ml | ghee |
| 2-3 tsp | 10–15 ml | garam masala spice |
| 1/4 tsp | 1.3 ml | salt |
| 1 pinch | cayenne or chili flakes | |
| — | lime juice | |
| 1 tsp | 5 ml | amchoor powder (optional) |
Instructions
- Preheat the grill to medium-high.
- Shuck the corn. Grill the corn dry, directly on the grates over medium-high heat, until nicely charred on all sides, about 12 minutes.
- Mix the garam masala and salt with the ghee (feel free to add chili flakes or cayenne for more spice, and amchoor powder if using).
- Brush the masala ghee over the charred corn. Sprinkle with salt and pepper.
- Squeeze with lime juice and serve!
- Add any optional garnishes: scallions, lime wedges, cilantro, fresh chilies, masala chaat.
Note: You can also cut the kernels off the charred corn and season them with the ghee, garam masala, salt, pepper and lime juice, then serve in a bowl. The same ghee-masala mix also works for sauteed frozen corn for a faster Indian side.
