
Authentic Mechada Clasica (Chilean Shredded Beef)

Instructions
Servings: 6-8-10-12. Ready in 1 hr 55 min; Prep time 20 min; Cook time 1 hr 18 min.
- Season beef all over with salt and ground black pepper. Use a knife to make long incisions into the meat, place carrots strips in incisions.
- Heat olive oil in inner steel pot of pressure cooker set to Saute on High. Sear beef in hot oil until browned on all sides, working in batches as necessary, 1 to 2 minutes per side. Transfer beef to a plate.
- Saute onion, sliced carrots, and bacon in inner steel pot until softened, 4 to 6 minutes. Stir tomatoes into onion mixture and cook until softened, about 5 minutes.
- Stir red wine, water, tomato sauce, ketchup, balsamic vinegar, Worcestershire sauce, oregano, and merquen into onion mixture, scraping any browned bits off the bottom of the pot with a spoon. Cook, stirring occasionally, until liquid is reduced and flavors blend, about 5 minutes.
- Place beef with carrot strips on top of sauce in inner steel pot and top with bay leaf.
- Lock pressure cooker lid in place and set steam vent handle to Sealing. Select Meat/Stew and cook on High Pressure for 60 minutes. Allow pressure to release naturally. When the red float drops to the original position, all pressure is released from the pot.
- Shred beef with 2 forks and serve on buns.
Mealthy Tip: Merken is a Chilean spice that includes ground dried and smoked red chile pepper. It sometimes includes salt and ground coriander. If you can't find it, you can use red pepper flakes or cayenne pepper instead.
