
Melon Sashimi Appetizer
A Japanese-style sashimi appetizer of marinated melon and tomato served with thinly sliced raw or smoked white fish and a soy-miso-sesame dressing.

| 2-3 tbsp | 30–45 ml | rice vinegar |

| — | white fish, raw or smoked | |
| — | soy sauce | |
| — | white miso | |
| — | sesame oil | |
| — | micro herbs (to garnish) |
Instructions
- Cut the melon into pieces. Toss in sugar, salt and a little rice vinegar (2-3 tbsp) and stir until the sugar dissolves, then let the melon soak in the marinade.
- Add the chopped tomatoes.
- Thinly slice the fish (raw white fish or a smoked variety).
- Sprinkle the fish with a little soy sauce mixed with white miso, a little sesame oil and some of the melon marinade.
- Stir the dressing and spread it over the plate, lay down the fish, then arrange the marinated melon and tomatoes on top of the fish and finish with more dressing.
- For presentation, garnish with micro herbs.
