- Cut/portion the risen dough with a dough scraper.
- Fold the dough over onto itself, using parchment/the scraper to help.
- Gather it into a rough round.
- Press and fold the dough to build tension.
- Divide the dough into two equal pieces.
- Shape each piece into a smooth round by folding the edges under.
- Lift a shaped round and set it into the baking mould.
- Place the shaped dough into the loaf pan.
- Brush the top with water or melted butter (glass shown).
- Slide the pan into the holder rack, then bake. Result: a rustic, flour-dusted round loaf.
