
Mexican Corn (Elote)
Air-fryer Mexican street corn (elote) slathered with lime mayonnaise and crumbled Cotija cheese. Ready in 26min (prep 10min, cook 16min).

Ingredients

| 1/2 cup | 120 ml | mayonnaise |
| 1 1/2 | limes, juiced | |
| 1/4 teaspoon | 1.3 ml | kosher salt |
| 3/4 cup | 180 ml | crumbled Cotija cheese |
| to taste | chili powder | |
| — | lime wedges |
Instructions
- Place CrispLid trivet into inner steel pot of pressure cooker.
- Spray corn with cooking spray and season with salt. Place 2 ears corn at a time onto CrispLid trivet with space between them.
- Set CrispLid on top of inner steel pot and plug in. Set to 500°F (260°C) for 4 minutes; flip and cook for 4 additional minutes. Lift the lid using the handle and set it on the silicone trivet. Repeat with remaining corn.
- Stir mayonnaise, lime juice, and 1/4 teaspoon salt together in a bowl until smooth.
- Slather mayonnaise mixture onto warm corn. Sprinkle cotija over mayonnaise mixture layer and season with chili powder. Serve with lime wedges.
Mealthy Tip: For a little more heat, add cayenne pepper with the chili powder!
