
Mincemeat nest with potato garnish

Ingredients
| 500 g | mincemeat "Стара планина" |
| 1 | medium head onion |
| 5 | eggs |
| 2 | slices bread |
| 0.5 | bunch parsley |
| 1 | pinch savory |
| 600 g | potatoes |
| 500 ml | oil |
| 200 g | canned red beetroot |
| 100 g | pickled gherkins |
| — | salt and black pepper |
Instructions
Mix the mincemeat with the finely chopped onion, one egg beaten in advance, the bread soaked in water, the finely chopped parsley, a pinch of savory, salt and black pepper. Leave the ready mixture in the fridge for about 30 minutes to firm up. Then divide it into four equal parts and from them form nests. In the middle of each make a little "bed". Place them in a tray greased with oil and bake in an oven heated to 220°C. After a few minutes take them out, crack one egg into the middle of each nest and bake another 6-7 minutes.
Meanwhile cut the potatoes into very thin strips. The goal is for them to imitate straw, on which the nests will later be placed. Fry them in about 400-500 ml oil until golden.
How to serve: Serve the finished nests over the potato straw with pickles and the red beetroot alongside.
